  • Cannellini beans (white beans) – provide a rich and creamy texture along with plant-based protein.
  • Soy milk – add a rich and creamy texture.  You can sub in veggie broth for a less creamy version or a different plant-based milk.
  • Cashews – along with the beans and milk, cashews add thickness and a velvety texture to the dressing.  If you are allergic to nuts, you can sub in sunflower seeds. If you do not have a high-speed blender, make sure to soak your cashews in water for 8 hours prior to blending.
  • Nutritional yeast – adds a nutty, cheesy flavor
  • Lime juice – adds a nice tangy flavor and allows this dressing to compliment spicy dishes.  Feel free to sub in lemon juice.
  • Garlic – for extra flavor
  • Salt – enhances flavor
  • Jalapeno pepper – provides spice and heat.  If you are not a spice lover you can omit or remove the seeds for less spice
  • Cilantro – adds extra flavor and compliments the jalapeno and lime.  You can omit or sub in a different herb if you prefer. 

How to Make Jalapeno Lime Dressing

Step 1:

Add all of the ingredients to a high-speed blender

Step 2:

Blend on high for 1-2 minutes or until everything is blended together and no nut pieces remain.

Step 3:

Pour the dressing into a glass jar or container and store in the refrigerator until ready to use.

Step 4:  

Serve over salads, tacos, potatoes, or pasta.

I’m allergic to nuts. What can I use instead of the cashews in the recipe?

Sunflower seeds work great if you are not able to eat cashews.

Is this recipe gluten-free?

Yes, all of the ingredients used in this recipe are gluten-free.

What if I do not have a high speed blender?

In order to get the cashews to blend up completely, I would recommend soaking them in water overnight for about 8 hours (make sure to rinse and drain them before adding to the blender). This will help to soften them and ensure that your dressing is not “gritty” from the cashews not blending completely.

I do not like spicy foods, can I omit the jalapeno?

Of course. You can either omit completely or remove the seeds to less the level of spice.

Can I add additional spices to the dressing?

Absolutely! Feel free to customize the spices in this recipe to suit your taste preferences. You can add chili powder, smoked paprika, mustard, dill or basil. This sauce is a blank canvas and can easily adjusted to your taste preferences.

How long will the dressing stay fresh in the refrigerator?

The dressing will keep for up to 10 days in the refrigerator when stored in an airtight container.

Ingredients
  

  • 1 15 ounce can cannellini beans or 1.5 cups cooked, rinsed and drained
  • 1 cup Soy or Pea Milk
  • ¼ cup Cashews raw and unsalted
  • ¼ cup Nutritional Yeast
  • ¼ cup LIme Juice
  • 1 clove Garlic
  • 1.5 teaspoons Salt
  • 1 jalapeno pepper
  • ½ cup fresh cilantro

Instructions
 

  • Add all ingredients to a high-speed blender and blend on high speed for about 1 minute until smooth.
  • Pour dressing into a quart mason jar and store in the refrigerator until ready to use.

Notes

  1. If you are allergic to nuts, you can use sunflower seeds in place of the cashews.
  2. If you do not have a high-speed blender, I would suggest soaking your cashews overnight to soften them. 
  3. If you are not a fan of spice you can omit the jalapeno pepper or remove the ribs and seeds to lessen the spice.
